WHAT IS KOMBUCHA?
Kombucha has been consumed by different cultures for many thousands of years. It is a traditional tea drink, an aqueous solution of a herbal infusion. This is set up with a “community” of bacteria and yeasts with sugar. The microbes ferment the mixture, resulting in a drink with ingredients that can be beneficial to our health.
WHERE DOES GINGER COME FROM AND WHY IS IT SO POPULAR?
In the 18th century, ginger beer was made in England and its colonies, especially the Caribbean. Ginger was imported from Asia and cane sugar from the Caribbean, which was then used to ferment ginger beer.
WHAT DIFFERENCES INGERBIER FROM NORMAL BEER?
Ginger beer is fermented, fizzy lemonade with different ingredients than beer. How do you make ginger beer? Which microorganisms are there? There are several methods. The simplest one is to grow a "ginger bug". This resembles a sourdough. Yeasts and lactic acid bacteria that live on the shell of the organic ginger are grown during feeding, which then form the "ginger bug". This can be stored in the refrigerator and used as a starter liquid for new ginger beer.
WHAT IS SPECIAL ABOUT GINGER?
Ginger beer is an uncomplicated lemonade approach that requires little maintenance (unlike water kefir and kombucha) and lasts a long time in the refrigerator. It has little taste of its own, which can be an advantage if you find the taste of kefir or kombucha too strong.
HISTORY OF FERMENTATION
Fermentation has been going on since the beginning of time. It is the oldest method of food preservation. All cultures around the world have fermentation as part of their cultural nutritional history from sauerkraut in Central Europe, Kimchi in Korea, miso in Japan, coffee in South America, Southeast Asia and East Africa, cheese in Western Europe, charcuterie in Southwest Europe and the list goes on. The origin of fermentation is so ancient that we cannot go back to when we did not have fermented foods in our lives. In fact, 1/3 of the foods we eat today are fermented. They are actually considered gourmet and are so easy to prepare at home.
BENEFITS OF FERMENTED FOOD
1. Fermented foods are nutrient-rich foods.
Fermented foods are the only method of cooking and preserving that actually increases the nutrient density of the raw materials. In particular, they produce B vitamins for higher energy levels and vitamin K2, which is essential for its key role in protecting against heart disease, ensuring healthy skin, building strong bones, promoting brain function, supporting growth and development as well is known in cancer prevention.
